Dinner Recipe | Taco Salad

Serves 4

Ingredients:
1 pound lean ground beef or ground turkey
6 cups chopped romaine lettuce
1 cup grape tomatoes, halved
1 cup chopped spinach
1 cup frozen corn
¾ cup chopped onion
1 cup green olives, chopped
½ cup cilantro
1 cup salsa
1 cup grated cheddar cheese (I use goats)
1 avocado, chopped
2 tbsp homemade taco seasoning
½ cup water

Instructions:
1. Heat a large skillet over medium heat. Add ground meat and cook (breaking up the meat) until browned.
2. Add taco seasoning and water and reduce heat to a low simmer. Add spinach, corn, and onion and cook, stirring occasionally, until liquid is mostly gone and meat is cooked through.
3. Assemble the salad. Divide lettuce between 4 plates. Top with ¼ of the taco meat, tomatoes, olives, cilantro, avocado and cheese.
4. Add a dollop of salsa.

Homemade taco seasoning:
3 tbsp chili powder ¾ tsp garlic powder
2 tbsp cumin ¾ tsp dried oregano
1 tbsp onion powder ½ tsp cayenne pepper
2 tbsp paprika
